Remember when I told you it was Girl Scout cookie time? Cookie sales are in full swing now, and I have a whooole bunch of Girl Scout cookies in my livingroom!
Our cookie mom Jackie told me about a Lemonade cookie shortage because area bakeries were buying them up to crush and use as cheesecake crusts. So I decided to do a little research and see what other Girl Scout recipes I could find. Here are a few of my favorties:
Samoa Kiss Brownies (in our area they're known as Caramel Delites)
1 box Devil’s Food Cake Mix1/3 cup evaporated milk
¾ cup melted butter
Mini Chocolate Kisses
¾ cup caramels, melted
½ package Samoas
Coconut
Mix cake mix, evaporated milk and butter. Pour half of mixture into a 9" x 13" pan. Bake at 350° for six minutes. Sprinkle one cup Kisses on top. Spread melted caramel over Kisses. Add ½ box crushed Samoas and one tablespoon toasted coconut. Pour remaining cake batter on top and bake 10 minutes. Drizzle with melted Kisses and sprinkle with coconut.

Lemon Crunch Cheesecakes with Caramel Apple Topping
Ingredients:
8 Lemonades Girl Scout Cookies; 5 crushed, and 3 broken into small pieces
4 teaspoons melted butter
1pkg. (8 oz) cream cheese, softened
1/4 cup sugar
1/4 teaspoon vanilla extract
1egg
1 cup finely chopped apple
1/3 cup caramel flavored topping
Instructions:
Preheat oven to 350 degrees F. Place 6 foil baking cups in muffin pan. Combine crushed cookies and butter. Press crumb mixture into bottom of each foil cup. Beat cream cheese, sugar, and vanilla in large bowl with electric mixer on medium speed until blended. Add egg; beat on low speed just until blended. Stir in cookie pieces. Spoon batter evenly over lemon crunch crust. Bake 20 minutes or until centers are almost set. Cool. Refrigerate 2 hours or overnight. Just before serving remove cheesecakes from foil cups. Top each cheesecake with chopped apple. Drizzle caramel topping over cheesecakes. Serve immediately.
