Freezer Cooking Day: FINALLY!


I am so pleased to finally have a freezer cooking plan!  I have had the best intentions, but we've been beyond busy around here!  I am going to attempt a rather ambitious schedule for today and tomorrow, so we'll see what happens.  I took out 21 pounds of ground turkey last night:



The first thing on my list is to brown most of this.  I will be using the ground turkey for these recipes:

20 cheddar ranch burgers (this makes 2 meals for us!)
3 batches lasagna
3 batches seasoned taco meat for nachos, tacos, burritos, etc...
2 batches chili

Next, I'll be trimming and/or boiling about 40 lbs of chicken breast for these recipes:

2 batches chicken enchiladas
4 batches grilled chicken for salads, chicken parmesan, etc...
2 batches chicken burritos
3 batches shredded chicken for quesadillas, chicken soup, etc...
2 batches chicken fajitas

I'm going to bake up some of the Pillsbury products on sale this week at Randalls to place in freezer bags for later.  I bought crescent rolls, cinnamon rolls, and cookies. 

I'm also going to chop about 12 onions and 10 bell peppers for use in recipes later on - I'll freeze them in smaller baggies for now so I can easily grab one when I'm cooking.

I used my coupon for the free Yoplait frozen smoothie and I loved it!  I was surprised to see that all it had in it was frozen chopped fruit, so I'll be chopping fruit to make my own "smoothis mix" using these fruits:

2lbs strawberries
1 bunch bananas
1 whole pineapple
2 lbs oranges
2 mangoes
1 lb raspberries

*I am such an amateur!   I've made several batches of one recipe before but I've never tried this once a month cooking thing!  I'm very excited to live and learn, so I'll let you all know how it goes....wish me luck.  :o)*
