I posted last week about my plans to have a freezer cooking day. Well, with the holidays here, my plans got pushed back (of course!). I spent the day today pouring through books and websites trying to find recipes and ideas to see where I could take this "thing". I've seen many different people talking about cooking and freezing and how easy it is, so I figured it was something to try.
I decided to make swedish meatballs tonight for dinner and tripled the batch. The meatballs came out amazing (they tasted like Stouffer's - yeah!), and I used two feezer bags to store the addional meatballs. I figure I can either make these meatballs into spaghetti and meatballs or Swedish meatballs, but it sure felt good to have a couple things to stow away for later use.
I felt so good about FINALLY getting started on freezer cooking that I then whipped up a batch of spaghetti sauce to throw in the crock pot for tomorrow. I again tripled the batch, so tomorrow I'll make my pasta bake (I stumbled upon this recipe once when I didn't have the right pasta for lasagna!) and freeze the rest as basic spaghetti sauce.
I would like to expand my freezer cooking plan to include simple lunches, pancakes and waffles for breakfast, and even a few baked goods for my sweet tooth! I'll let you all know how it goes...:o)
